The spice blend is what makes this special: cinnamon, ground ginger, ground cardamom, ground cloves, and a pinch of sea salt. If you're missing one of the spices, don't stress. You can adjust the ratios or leave one out entirely. Want it spicier? Add more ginger. Prefer it sweeter and milder? Go heavy on the cinnamon and light on the cloves.
If tree nuts are an issue for you, sunflower seed butter or tahini can work as substitutes, though the texture will be different. The dates are doing most of the binding work here, so you have some flexibility.
The Practical Stuff
These energy balls store in an airtight container in the fridge for up to one week, or you can freeze them for up to three months. As I mentioned above, making a double or even triple batch isn’t gonna add that much time but future you will thank you when you need a quick snack and don't have the bandwidth to make something from scratch or the GI fortitude to handle processed snacks from the grocery.
You'll need a food processor to blend everything into a sticky, cohesive mixture. A high-powered blender might work in a pinch, but a food processor makes this much easier. No other special equipment required.
The whole process takes about 15 minutes from start to finish, and most of that is just letting the food processor do its thing while you clean up.
The Method
This couldn't be simpler. Add all your ingredients (dates, cashews, cinnamon, ground ginger, cardamom, sea salt, and ground cloves) into your food processor. Blend on high for two to three minutes, stopping occasionally to scrape down the sides.
You want the mixture to be sticky and hold together when you pinch it. If it's too dry and crumbly, add one more date. If it's too wet, add a few more cashews.
Once the mixture holds together, use a teaspoon or a one-inch cookie scoop to portion it out. Roll each portion between your palms to form neat little balls. If the mixture is sticking to your hands, lightly wet your palms with water or a tiny bit of coconut oil.
That's it. No baking, no cooking, no waiting around for things to set. Make them, store them, grab them when you need them. Easy peasy, lemon squeezy.
