The Method
Start by setting up a double boiler. Fill a saucepan with a bit of water, bring it to a simmer over medium heat, then reduce to low and place a heat-proof bowl on top. Make sure the bowl doesn't touch the water or you'll overheat the chocolate.
Add your chocolate chips and coconut oil to the bowl, stirring continuously until everything melts together into a smooth, glossy mixture.
Pour a thin layer of melted chocolate into each cavity of your mini heart molds, then give the tray a gentle shake to even everything out. Pop the tray in the freezer for five minutes to let that first layer set. This creates a solid chocolate base so the peanut butter doesn't just sink through.
Pull the tray out and divide your peanut butter among the hearts, right on top of that set chocolate layer. Another gentle shake evens out the peanut butter. Then pour the remaining chocolate over each heart, shake one more time to smooth the tops, and sprinkle with flaky sea salt. Back into the freezer for 15 minutes until everything is completely set.
Pop them out of the molds, add more salt if you're feeling it, and you're done.
