Today I'm sharing one of my favorite quick meals that comes together in just 25 minutes.
This Cajun Shrimp Salad combines seasoned shrimp with crisp romaine, juicy tomatoes, cucumbers, and chickpeas, all topped with cool, creamy tzatziki. The contrast between the warm, spiced shrimp and the fresh, crunchy vegetables makes every bite interesting.
What I love about this recipe is how customizable it is. Not a fan of spicy? Simply swap the Cajun seasoning for smoked paprika. Want to prep ahead? Cook the shrimp and prep your veggies earlier in the day and just toss everything together when you're ready to eat.
The Mediterranean-inspired flavors work beautifully together, the whole meal comes from ingredients you probably already have on hand, and it's perfect for busy weeknights.
