Happy Hump Day!

Today's recipe is pure comfort in a bowl: Cream of Tomato & Garlic Soup is as cozy as it gets.

What makes this soup special? The tomatoes and garlic are roasted together in the oven until they're sweet and tender, creating layers of rich flavor you just can't get from stovetop cooking. The roasted garlic becomes mellow and buttery, adding depth to every spoonful.

This recipe serves 4 and comes together in about an hour and 15 minutes, perfect for a weekend cooking project or making ahead for the week. I love the toasted pumpkin seeds on top for a satisfying crunch, and fresh basil adds a bright finishing touch.

Want to switch things up? Try coconut milk or cashew cream for a dairy-free version, or add a pinch of chili flakes before roasting for some warmth.
