Today's recipe is perfect for busy mornings or meal prep Sunday: Hashbrown, Ham & Gruyere Egg Cups!
These savory little cups combine crispy hashbrown "shells" with a delicious egg filling studded with nutty Gruyere cheese, diced ham, and fresh parsley. They're ready in just 30 minutes and make 4 servings (2 cups each).
What I love most about this recipe is how make-ahead friendly it is. Pop them in the fridge for up to 4 days, or freeze them for up to 3 months for those extra hectic mornings. Just reheat and enjoy!
Want to spice things up? Add some chili flakes or your favorite hot sauce to the egg mixture before baking.
